Chicken Hekka

5 chicken breasts
1¾ oz. bean thread (1 bundle or 1 small pkg. or 1/3 large pkg. Nice brand)
1 bag (8-9 oz.) Chop Suey mix or Bean Sprouts
½ cup sliced bamboo shoots
10 Shiitake mushrooms
2-3 stalks green onions (optional)
½ cup teriyaki sauce
1 can chicken broth
pinch of salt and pepper

Cut chicken into 1½-2" pieces and marinate in Teriyaki sauce. Cut bean thread (long rice) into 3" pieces. Soak Shiitake mushrooms and long rice in water until soft. Remove mushroom stems and slice into ¼" pieces. Saute chicken in large saucepan. Add salt, pepper, and additional Teriyaki sauce if required. Add bamboo shoots, mushrooms, chop suey mix or bean sprouts and chicken broth and cook until tender. Add long rice and green onions and simmer a few minutes.
